Oven Baked Avocado with Cheesy Breadcrumbs

A wonderful dish as an appetiser at a dinner party.

Ingredients

Avocado 1
Lemon juice 1 tsp
Spring onion 1
Soy sauce 1/2 tsp
Mayonnaise 1/2 tbsp
Breadcrumbs 2 tbsp
Parmigiano reggiano 1 tbsp
Olive oil a little

Method

Cut the very rip avocado in half and remove the stone. Be careful not to score the skin, keep it to present the dish.

Chop the avocado into 1cm dice and mix with the lemon juice, finely chopped spring onions, soy sauce and mayonnaise in a bowl.

Fill the avocado skins with the mixture from Step 2. Sprinkle with the grated cheese and breadcrumbs.

Drizzle some olive oil on top and bake in a preheated oven 200C for 10 minutes until golden brown.

Tips & Note

●A touch of wasabi at Step 2 adds to the flavour, if you like it.
