Delicious Purple Potatoes with Brown Rice

Surprisingly, kids love this rice dish with colourful potatoes.

Ingredients

Brown rice 2 gou (300g)
Water for 3 gou
Purple potatoes 300g
Salt 2g

Method

The night before, wash the brown rice and soak in the water.

The next day, wash the potatoes and peel and chop to large bitesize pieces. Add to the rice in the pan with the salt.

Put the lid on and cook on medium heat. When it starts to boil, turn the heat down to low. Cook for about 20 minutes until the rice is cooked.

Turn the heat off and steam cook on residual heat. Lightly mix together.

Transfer to a serving dish and enjoy.

Tips & Note

You could keep the potato skins on if you like. It's lovely when cold.
