Fried Shredded Sweet Potato Skins

Sweet potato skins 100g
Sugar 1 tbsp
Mirin 1 tbsp
Soy sauce 1 tbsp
Water 1 tbsp
Crushed sesame seeds as required
Vegetable oil 1 tbsp

Method

Wash and thickly peel the sweet potatoes. Shred the skins into fine strips and soak in water for 3 minutes. Pat dry with kitchen paper.

Put the vegetable oil in a frying pan and fry the shredded skins. Add the sugar, soy sauce, mirin and water and fry on medium heat until all the moisture has evaporated.

Tips & Note

You could just cook the dish without any oil for a healthier finish.
