Oven Baked Pork Fillet with Mozzarella & Spicy Salsa

Ultra simple - just top the fried meat with mozzarella and salsa - but it looks and tastes so professional!

Ingredients

Pork fillets 200-250g
Salt & pepper as required
Mozzarella cheese 1
Olive oil as required
Garlic 1 clove
Cherry tomatoes 10-20
Basil leaves 3-4
Dried chilli 1

Method

Cut the pork fillet into 4 slices and season with salt & pepper. Put some olive oil in a frying pan on medium heat and fry the fillets until brown on both sides.

When the pork is almost cooked (4 minutes in total), put a slice of mozzarella cheese on top and fry for a further 2 minutes.

Transfer the pork to an oven tray and put in a preheated oven 180C for 5-6 minutes. In the meantime, make the salsa:

Put 2 tbsp olive oil in a frying pan or saucepan and add the finely chopped garlic. Now turn the heat on to medium.

Add the cherry tomatoes or tinned tomatoes and the chopped dried chilli and simmer. Add 2-3 pinches of salt and a pinch of pepper.

When the salsa is reduced, add the ripped basil leaves and turn the heat off. Add 2 tbsp olive oil and stir in.

Remove the pork from the oven and transfer to a serving dish. Pour over the salsa from Step 6 before serving.

Tips & Note

If you use tinned tomatoes, half the salsa will remain so keep for another dish. It will stay in the fridge for one week.
