Bruschetta Campana-Style

Easy to make and makes your dinnertime table light up!

Ingredients

Baguette slices 4
Cherry tomatoes 2
Rocket 1 handful
Extra virgin olive oil as required
Garlic 1/2 clove
Balsamic vinegar glaze as required

Method

Slice the baguette or your favourite bread and lightly toast.

Chop the tomatoes into small dice and oven bake for 5 minutes.

Rub the toast slices with the garlic. Drizzle with olive oil to soften.

Sprinkle with diced tomato and rocket then drizzle over the glaze.

This is the glaze, it's a useful thing to have in the cupboard as it lasts a long time.

Tips & Note

A more solid bread becomes very hard when toasted, so choose a softer bread.
