Salt a pinch
Butter 1 tsp
Cooked rice for 1
Chicken curry for 1

Method

Put the cooked rice in a small bowl and press firmly. Turn it out onto the middle of a serving dish. Add the salt into the beaten eggs and fry in a buttered frying pan to make an omelette. Slide on top of the rice to cover.

Pour around the chicken curry. Sprinkle with some finely chopped chives or parsley if you like.
