Ingredients

Onion (medium) 1
Vegetable oil 3 tbsp
Chicken stock 700ml
Chicken breast fillet 1
Japanese curry cube 1

Method

Put the oil in a pan and add the sliced onions. Fry patiently for 20 minutes, don't take your eyes off it otherwise it might burn.

After 20 minutes, the onions will reduce to 1/3, it will release a sweetness and rich flavour. Add the chopped chicken and fry.

When the chicken is nicely browned, add the chicken stock and simmer on medium heat until reduced to 1/3.

Simmer for 15-20 minutes to make a lovely onion and chicken soup. Turn the heat off and dissolve in the curry cube. I used JAVA brand.

The flavour deepens as it cools. Simply reheat before you are ready to enjoy it.
