Smoked Mackerel Rice Sandwich (Onigirazu)

Ingredients

Cooked rice 100-120g
Nori sheet 1
Salt a pinch
Smoked mackerel strips 2
Gherkins 2 slices
Flat thin omelette 1/2 egg
Leaf vegetables (lettuce) 1
★Soy sauce 1 tsp
★Mayonnaise 1 tbsp
★Wasabi 1/2 tsp

Method

Here are the ingredients. The smoked mackerel is boneless, choose which size suits you.

Make 2 small omelettes with the whole egg (keep one for this recipe). I added a pinch of sugar to make it a bit sweet.

Mix all the ★sauce ingredients together in a bowl.

Put some cling film on a chopping board and place a nori sheet on top - both should be in a diamond shape.

Add a pinch of salt into the cooked rice. Put half the rice into the middle of the nori sheet and spread slightly into a square shape.

Cover with the lettuce, mackerel and gherkins. Pour over plenty of sauce.

Cover with the omelette.

Top with the remaining rice and spread out.

Lift the top and bottom corners of the nori with the cling film and join in the middle. Press for 10 seconds.

Repeat with the left and right corners and press firmly. Cover with more cling film and press again.

Try to make a good solid shape.

Leave for 4-5 minutes until the nori is softened. Slice diagonally with a wet knife and remove the cling film. Place on a serving dish so you can see the contents.

Tips & Note

●It's worth making the sauce slightly strong tasting, as you might lose the flavour when it's combined with the rice.
