Serves 2 Cook: 15 min

Ingredients

Smoked mackerel fillets (boneless) 2
Rocket leaves 4
Horseradish 1 tsp
Avocado 1/6
Sesame seeds a little (8g)
Sushi rice 110g
Nori sheet 1/2

Method

1
Here are the ingredients
2
Slice the mackerel into long strips. Peel the avocado and slice into long strips. Wash the rocket leaves and pat dry.
3
Put a nori sheet on cling film onto a bamboo mat. Take 105-110g cooked rice and spread out onto the nori sheet.
4
Roll like this: Take care to keep the rice inside the nori so it doesn't come out at the ends.
5
Spread the rice right over the nori, 1cm over the nori at the bottom and 1cm less across the top.
6
Sprinkle the sesame seeds over the rice and turn the nori and rice over.
7
Lay the rocket leaves over the nori and spread the horseradish. Place the mackerel and avocado evenly.
8
Lift the nori sheet from your side with the bamboo mat and roll over to cover the ingredients, keep rolling over.
9
10
Press firmly as you roll.
11
With a wet knife, slice into 6 even slices - cut in half first then another 2 cuts each side. Arrange attractively onto a serving dish.

Tips & Note

●You can use plain cooked rice instead of sushi rice.
●Microwave the smoked mackerel for 20-30 seconds before using.
