The Fluffiest Meringue Omelette!

Ingredients

Egg 1
Salt a pinch
Sugar 2 pinches
Butter 1 tsp

Method

Separate the egg into whites and yolk. Add the pinch of salt to the egg white and mix to firm peaks with a hand blender.

Add the sugar and egg yolk and whisk for 1 minute.

Put the butter in a frying pan and drop in the meringue mixture and spread to 15cm diameter with a spatula.

Put the lid on and cook on low heat for 4-5 minutes. Remove with a fish slice and transfer to a serving dish.

Fold into half using the fish slice and press down to release some of the meringue.

You can enjoy with some jam or fruit or cream.
