The Fluffiest Meringue Omelette!

Using only an egg, you get a lovely sweet texture.

Ingredients

Egg 1
Salt a pinch
Sugar 2 pinches
Butter 1 tsp

Method

Separate the egg into whites and yolk. Add the pinch of salt to the egg white and mix to firm peaks with a hand blender.

Add the sugar and egg yolk and whisk for 1 minute.

Put the butter in a frying pan and drop in the meringue mixture and spread to 15cm diameter with a spatula.

Put the lid on and cook on low heat for 4-5 minutes. Remove with a fish slice and transfer to a serving dish.

Fold into half using the fish slice and press down to release some of the meringue.

You can enjoy with some jam or fruit or cream.

This is another recipe from egg somelier Yukari - it's like eating the most delicious air, it's so light and fluffy! Although an omelette with one egg, it's something very special.
