Oven Baked Salmon with Vegetables

Simple and easy to make when entertaining family.

Ingredients

Salmon fillets 4
Onion 1
Carrot 1
Shiitake mushrooms 4-8
Leek 1
Chinese chives (nira) 1 bunch
Miso sauce:
Miso 2-3 tbsp
Mirin 1-2 tbsp
Soy sauce as required
Sesame oil 1 tbsp
Garlic 1 clove
Crushed chilli (optional) as required
Baking paper as required

Method

Slice the salmon 1cm thick. Finely slice the onion, leek, mushrooms and boiled carrot.

Cut the chives to match the salmon.

Put all the miso sauce ingredients in a bowl and mix well.

Lay two sheets of baking paper and lightly spread the miso sauce on the bottom half. Lay the salmon pieces on top.

Cover with the vegetables and chives and drizzle with a bit of water.

Fold the baking paper over to cover. Fold in all the edges to stop any liquid escaping.

Place onto a baking tray in a preheated oven 210C (Gas mark 7) for 15-20 minutes. You can serve as it is or transferred to a dish.
