Chicken & New Potato Stew

This is ideal when you want light dish with an Asian flavour.

Ingredients

New potatoes 10
Chicken thighs 2
Salt & pepper as required
Onion 1/2
Garlic 1 clove
Chilli (small) 1
Vegetable or chicken stock 200ml
▼Fish sauce (nam pla) 1 tbsp
▼Sugar 1/2-1 tbsp
▼Soy sauce 1/2-1 tbsp
Lime or lemon juice 1/2
Vegetable oil for frying as required
Spring onions as required
Coriander as required

Method

Boil the new potatoes until just cooked. Remove the skin and bone from the chicken and chop to bitesize pieces.

Thinly slice the onion, finely chop the garlic and roughly chop the chilli.

Heat up lots of oil in a pan and fry the potatoes and onions until golden. Drain on kitchen paper and keep aside.

Season the chicken with salt & pepper. Lightly fry in the same pan until browned, then drain on kitchen paper and keep aside.

Put some oil in a different pan and fry the garlic and chilli. Add the stock and heat.

Add Steps 3 & 4 and all the ▼ingredients into the stock and simmer until the sauce reduces.

Add the lime or lemon juice and sprinkle the finely chopped spring onions and coriander before serving.

●Chicken thigh works better than chicken breast in this recipe, I find
