Ingredients

Chicken thigh 1
Tinned water chestnuts 1
Yellow pepper 1/4
Green pepper 1/4
Red pepper 1/4
Onion 1/2
Miso (red) 1 tbsp
Chinese chilli bean sauce 1 tsp
Mirin 1 tbsp
Chicken stock granules 1 tbsp
Sesame oil 1 tsp
Soy sauce 1 tbsp
Sugar 1 tsp
Water 50ml
Potato starch in a bit of water as required

Method

This is the tin of water chestnuts, often used in Chinese dishes.

Season the chicken with salt & pepper and microwave for 2 minutes, keeping the juices.

Put some oil in a frying pan and add the roughly chopped vegetables and fry for 1 minute.

Add the chopped chicken and juice from Step 2 and all the seasoning ingredients from the miso to the water and fry for 2 minutes.

When all the ingredients are cooked, add the potato starch to thicken before serving.
