Kyoto-Grilled Salmon (Saikyo Yaki)

Ingredients

Salmon fillets 4
Miso sauce:
Miso (white) 16 tbsp
Sake 4 tbsp
Mirin 4 tbsp
Sugar 4 tbsp
Salt a pinch

Method

Lightly sprinkle the salmon with salt and wrap with kitchen paper for 20-30 minutes. Keep at room temperature. The salt is to remove any moisture not for seasoning.

In a small pan, put the sake, mirin and sugar on medium heat to dissolve. Don't boil it.

Put the miso in a large bowl and add Step 2 a bit at a time then mix thoroughly.

Put Step 3 into a container, add the salmon fillets, cover with cling film and put the lid on. Keep in the fridge overnight.

Remove the salmon and wash under running water to remove the miso. Pat dry.

Grill or oven bake in a preheated oven 200C for 10-15 minutes.

Tips & Note

●When you grill or bake it, the miso will burn so wash it off well
