Roast Potatoes with Rosemary

The outside is crunchy and the inside is fluffy - delicious roast potatoes!

Ingredients

King Edward potatoes (medium) 2
Goose fat 3 tbsp
Rosemary sprigs 2
Salt a pinch

Method

Preheat the oven 230C.

Put the goose fat in an oven tray and put in the oven (use olive oil if you don't have goose fat).

Cut the peeled potatoes into quarters and boil or steam for 10 minutes - they edges should be soft.

Drain the potatoes and shake them in the pan to rough up the surfaces.

The fat from Step 2 should be smoking hot. Add the potatoes and roast for 20-25 minutes.

Add the rosemary leaves after the potatoes come out of the oven and mix. Roast for a further 5 minutes, basting with the fat now and then. Remove from the oven and sprinkle with the salt before serving piping hot.
