Hot Chilli Potato Wedges

The wedges are almost Indian style with mixed herbs and crushed chilli.

Ingredients

Potatoes 600-700g
Salt (for boiling) a pinch
Sauce:
Crushed chilli 1 tbsp
Mixed herbs 1 tbsp
Garlic 2 cloves
Olive oil 4 tbsp
Salt 1 tsp
Pepper 1 tsp

Method

Cut the potatoes into wedges (large into 8 pieces, medium into 6).

To make them crispy, soak the wedges in water for 5 minutes to remove the starch.

Put the potatoes into boiling salted water and cook for 6 minutes. Drain and pat dry.

Put all the sauce ingredients in a large bowl and mix well (finely chop the garlic).

Add the cooked potatoes to the bowl and combine well with the sauce.

Transfer to a non-stick tray and roast in a preheated oven 220C for 20 minutes.

Transfer to a serving dish and serve with aurora sauce (equal quantities of ketchup and mayonnaise).

Tips & Note

●You can add curry powder to the sauce if you like
