Steam Baked Cod with Anchovies

Ingredients

Anchovy fillets 3-4
Cod fillet 1
Sundried tomatoes in oil 15g
Courgette 1/2
Mushrooms 4-5
Salt & pepper as required

Method

Preheat the oven 180C.

Finely chop the sundried tomatoes and anchovies. Cut the courgettes into small dice and thinly slice the mushrooms.

Place the seasoned cod fillet on a sheet of foil.

Cover with Step 2 and close the foil, sealing tightly. Put on a baking tray and in the oven for 12 minutes.

Transfer carefully to a serving dish and open up the foil when ready to serve.

I used these tinned anchovy fillets from Waitrose.

You can also buy them in a jar. The tinned is cheaper but more difficult to use up in one go, so better to keep a jar.
