Hot & Sweet Chicken & Baby Onions

A perfect dish to go with rice.

Ingredients

Baby onions 300g
Chicken thighs 2
Vegetable oil 1 tbsp
Soy sauce 2.5 tbsp
Sake 2 tbsp
Mirin 2 tbsp
Sugar 1.5 tbsp
Dashi broth or water 150ml

Method

Peel the onions and lightly score a cross at the base. Remove the bones from the chicken and cut to bitesize pieces.

Put the oil in a frying pan on medium heat and fry the whole baby onions for 5 minutes until nicely browned all over.

Add the chicken pieces and dashi broth and bring to the boil. Remove any scum and add the sake, sugar, mirin and soy sauce.

Turn the heat down and simmer for 20 minutes until the sauce is reduced. It's ready to serve.
