Oven Baked Sardines with Mashed Potato Topping

Ingredients

Sardines 6
Mashed potato powder 8 tbsp
Hot water 10 tbsp
Salt & pepper as required
Olive oil as required
Cheese (such as Cheddar) 50g
Breadcrumbs 1 tbsp

Method

Add the hot water a bit at a time to the potato powder and mix to make a smooth mash. You can, of course, use whole boiled potatoes and mash.

Sprinkle the sardines with the salt on both sides and with the pepper on the flesh side only. Place in an oven tray, skin side down, and drizzle with the olive oil.

Spread the mash potato on top of the sardines and top with the breadcrumbs and cheese. Bake in a preheated oven 180C for 15-20 minutes.

Serve with aurora sauce, an equal mix of ketchup and mayonnaise.
