Mozzarella Bruschetta Caprese with Anchovy

Ingredients

Baguette slices 4
Mozzarella cheese 1
Anchovy fillets 4
Garlic 1 clove

Method

Slice the baguette into slices 1cm thick diagonally to make a large surface area.

Bake in an oven 200C preheated oven for 5 minutes. Rub the garlic clove across each slice surface, then cover with the mozzarella cheese cut into 4 slices.

Put one long anchovy fillet across the top.

Return to the oven at 200C for 10 minutes. Eat while hot!

Tips & Note

●You can drizzle olive oil and sprinkle some parsley to give it a more exclusive look!
●You can garnish with finely chopped cherry tomatoes to make it look really colourful
