Hot and Spicy Potato Wedges

Great as a side dish, or tasty with a drink or as a snack.

Ingredients

Potatoes 600-700g
Salt for boiling 1% of water
Sauce:
◆Crushed Chilli 1 tbsp
◆Mixed herbs 1/2 tbsp
◆Curry powder 1/2 tbsp
◆Garlic 2 cloves
◆Olive oil 4 tbsp
◆Salt 1 tsp
◆Pepper 1 tsp
Lemon 1/2

Method

Cut the potatoes into wedges (medium to 6, large to 8).

To make them crisp, soak in water for 5 minutes to remove the starch. Preheat the oven 220C.

Put the salt into boiling water and boil the potatoes for 6 minutes. Pat dry when cooled.

Put all the ◆ingredients into a bowl and mix well. Finely chop the garlic.

Add the cooked potatoes into the bowl and combine with the sauce.

Transfer to a baking tray and put in the oven for 20 minutes.

Place on a serving dish, squeeze over the lemon and serve.

Tips & Note

Adding the lemon juice really lifts the curry flavours. My Indian friend said so!
