Sausage Meatballs in Tomato Sauce

A simple simmered tomato sauce with meatballs. Make lots and freeze it, it goes well with pasta or rice and sprinkled with cheese like a gratin.

Serves 4

Ingredients

Minced beef 200g
Pork sausages (removed from the skin) 2
Garlic (finely chopped) 1-2 cloves
Parsley (finely chopped) 1 tbsp
Beaten egg 1
Breadcrumbs 2 tbsp
Cream 2 tbsp
Salt & pepper as required
Tomato sauce 500ml
Beef or chicken stock 200ml
Yogurt or milk 1 tbsp

Method

Put all the ingredients up to the salt & pepper into a bowl and mix with a spatula in a slicing motion.

Make into meatballs all the same size.

Put in a pan with some oil and brown on all sides then remove to a plate.

Add the tomato sauce and stock to the same pan and bring to the boil.

Add the yogurt or milk, this will make it smooth.

Return the meatballs to the pan and mix. Simmer until the meatballs are cooked through. Season with salt & pepper.

I made some spiral pasta to go with this sauce, it picks it up well.

Tips & Note

Adding the sausagemeat to the mince is a good idea because the sausage is already seasoned. It also helps to combine the ingredients together. The yogurt or milk is there to make the sauce a bit smoother, but don't add cream in the sauce instead as this will be a bit too rich and the flavour will change.
