Courgette Pizza

Has a delicious depth of flavour with the sundried tomato paste.

Ingredients

Courgette (large) 1
Sundried tomato paste 4 tbsp
Grated Cheddar cheese as required
Rocket as you like

Method

Trim the ends of the courgette and slice into 4 long quarters.

Spread liberally with sundried tomato paste.

Crumple some foil onto a baking tray. Put the courgette slices onto the foil.

Spread lots of grated cheese over the top covering 80% of the courgettes.

Put into a preheated oven 200C for 15-18 minutes.

It's ready to serve nice and hot. You could drizzle with Tabasco or your favourite chilli sauce.

This is the sundried tomato paste I used, it's good for pizza or bolognese sauce when you need a concentrated flavour.

Tips & Note

If the courgette is overcooked, you won't enjoy its firm texture.
