German Potato Salad

Sausages and potatoes are very German in a salad, but this time, I added boiled egg.

Ingredients

New potatoes 300g
Frankfurter 1
Onion 1/6
Gherkins 2
Egg 1
Dressing:
Vinegar 3 tbsp
Vegetable oil 4 tbsp
Salt 1/2 tsp
Sugar 1 tsp
Pepper a pinch
Wholegrain mustard 1 tbsp
Parsley as required

Method

Finely chop the onions and soak in water. Finely chop the gherkins.

Boil the egg with the potatoes and add the frankfurter 1 minute before everything is cooked.

Make the dressing in a large bowl by mixing all the ingredients together. Add the cooked potatoes and mix.

Drain the onions, pat them dry and add to the bowl with the gherkins, mustard and roughly chopped cooked frankfurter and mix well.

Finely chop the egg white and yolk separately and add to the bowl. Transfer to a serving dish and sprinkle with the finely chopped parsley.
