Carbonara Rice

A grown up flavour using chorizo instead of pancetta.

Ingredients

Cooked rice for 1
Chorizo 1 or 2
Onion (medium) 1/2
Olive oil 2 tbsp
Egg 1
Parmigiano reggiano 30g
Black pepper a little
Parsley a little

Method

Chop both the onion and chorizo into 1cm dices. Use 2 chorizo if you like it spicy.

Put the oil in a frying pan and fry the chorizo on medium heat.

When the chorizo is cooked, add the onions and fry just before the chorizo starts to burn. Turn the heat off.

Put the egg in a bowl and grate the cheese into it. Add the black pepper.

Stir Step 4 well and add the hot cooked rice. Mix well then add to the frying pan in Step 3. Cook on low heat and mix well.

Just before the egg is cooked through, transfer to a serving dish and sprinkle with the parsley and some grated cheese.

Tips & Note

●Use the egg as a sauce, so make sure it's not fully cooked otherwise it will just be egg fried rice.
