Peri Peri Prawn Rice Sandwich (Onigirazu)

I used the peri peri sauce from Nando's.

Ingredients

Cooked prawns 6
Salt for seasoning the rice a pinch
Nori sheet 1
Lettuce leaf 1
Gherkins 1 tbsp
Cooked rice 100g
Peri peri sauce 1 tbsp

Method

Here are the ingredients.

Soak the prawns in hot water and pat dry.

Put the prawns, finely chopped gherkins and peri peri sauce in a bowl and mix well.

Place some cling film on a chopping board and put the nori sheet on top in a diamond shape.

Place half of the salted cooked rice on top of the nori sheet and spread to a flat round. Sprinkle with some sesame seeds.

Cover with the lettuce cut to size then the prawn mixture from Step 3.

Cover with more lettuce and the remaining rice.

Take the top and bottom corners of the nori sheet and cling film and bring up to the centre to overlap. Press firmly.

Repeat with the left and right corners and overlap in the middle. Wrap firmly with the cling film.

Press with your palms to secure and keep aside for 4-5 minutes.

When the nori sheet has softened, cut with a sharp wet knife (together with the cling film).

Remove the cling film and serve. You can cut this way or as diagonals.

Tips & Note

●Wet the knife beforehand to avoid the rice sticking to it
●If you cut diagonally, the end result will be two triangles
●You can use whichever sauce you like, you could also add mayonnaise
