Hearty and Satisfying Mushroom Miso Soup

Mushrooms are rich in dashi and umami, so add less miso. It is a delicious miso soup with plenty of guanylic acid.

Ingredients

Mushrooms 10-12
Butter 1.5 tsp
Dashi stock granules (or vegetable stock cube) 1/2 tsp (or 1/2)
Hot water 600ml
Miso 30g
Spring onion 1

Method

Cut the mushrooms into 4 slices each.

Put the butter and mushrooms in a pan and fry on high heat for 5 minutes, then stir fry on medium heat for a further 5 minutes. Don't disappear to the bathroom while the mushrooms cook as they could burn!

After 10 minutes, it looks like this. There's a perfect umami developed now.

Pour in the hot water, add the dashi stock and boil for 5 minutes on high heat. Turn it down to medium heat and dissolve in the miso and it's done! Pour into a bowl and sprinkle the finely chopped spring onion on top. Enjoy!
