Ingredients

Butternut squash 80g
Potato 80g
Carrot 80g
Onion 1/4
Hot water 600ml
Dashi stock granules 1/2 tsp
Miso (red or mixed) 40g
Spring onion 1

Method

The butternut squash is part of the pumpkin family. 80g is about one quarter of a squash.

Chop the squash, carrots and potatoes into 1.5cm dice. Cut the onions into rough wedges.

Add the dashi stock granules into the boiling water and allow to dissolve. Add the squash, potatoes
and onions and boil for 5 or 6 minutes. When the root vegetables have softened, turn the heat down to low and add the miso dissolved in a bit of water.

Serve in soup bowls and sprinkle with the finely chopped spring onion. Enjoy!
