Miso Soup with Potatoes and Onions

Drizzle with some chilli oil to make it hot and tastier!

Ingredients

Potato (medium) 1 (200g)
Onion (medium) 1
Dashi stock granules (or fish stock cube) 1/2 tsp (1 cube)
Miso 40g or less
Hot water 600ml
Spring onion 1/3
Chilli oil (optional) as you like

Method

Cut the potato into two then into 5mm slices and soak in water for 5 minutes to remove the extra starch. Slice the onion.

Boil the hot water in a pan and add the dashi stock. Add the drained potatoes and cook for 3 minutes then add the onions. After another 3 minutes, turn the heat down and add the miso dissolved in some of the water.

Serve in a bowl or a soup dish and scatter the finely chopped spring onion. It is delicious enough as it is, but it becomes that something extra if you add a few drops of chilli oil.
