Mushrooms in a Sweet & Spicy Sauce

Ingredients

Tesco Asian Selection Mushrooms pack 1
Chestnuts mushrooms 3
Spring onion 1
Sesame seeds 2 tbsp
Soy sauce 3 tbsp
Mirin 1 tbsp
Sugar 1 tbsp
Ginger 1 thumb
Hot water 5-6 tbsp
Potato starch in a bit of water as required

Method

This is the Asian selection mushrooms pack from Tesco, it has shimeji, eringi and enoki mushrooms in it.

Put the sesame oil in a frying pan and heat on high. Add the sliced chestnut mushrooms and shredded ginger and stir fry for 1 minute.

Add the eringi and shimeji mushrooms and stir fry for 2 minutes. Add the enoki mushrooms and stir fry for 1 minute. Add the soy sauce, mirin, sugar and hot water and simmer for 2 minutes.

Add the potato starch in a bit of water to thicken the sauce. Scatter with the finely chopped spring onion before serving. It's just as delicious if you add tofu.
