Simmered Tofu with Pork (Niku Dofu)

Thinly slice the pork and simmer with tofu in a delicious soybean sauce.

Ingredients

Pork loin fillet 1
Tofu 1
Spring onion 1
Dashi stock 500ml
Soy sauce 3 tbsp
Mirin 3 tbsp
Sugar 3 tbsp
Potato starch in a water 1 tbsp each
Onion 1
Ginger 1 thumb
Salt & pepper a pinch each
Sesame oil 2 tbsp

Method

Slice the pork loin thinly then season with the salt & pepper. Add the grated ginger and the sesame oil and rub well with your hands.

Make up the dashi stock with 1 tsp dashi stock and 1 tsp chicken stock granules in 500ml hot water.

Boil the dashi stock and add the meat, sliced onion, soy sauce, mirin and sugar and cook for 5 minutes on high heat. Remove any scum.

Cut the tofu into small dice and add into the pan. Simmer until the sauce reduces to half, then adjust for seasoning with soy sauce and mirin if necessary.

Add the potato starch in water to thicken the sauce, sprinkle with the finely chopped spring onion and enjoy!
