Miso Soup with Pumpkin and Onion

Ingredients

Pumpkin 200g
Onion 1/2
Dashi stock granules 1/2 tsp
Hot water 600ml
Miso 35-40g
Parsley as you like

Method

This is the pumpkin I used.

Boil the water in a pan then add the dashi stock granules. Add the sliced onion and roughly chopped pumpkin and boil for 5 minutes on high heat.

Turn the heat down to medium and dissolve in the miso. Serve sprinkled with fresh parsley if you like.
