'Quiche' Pancake

Use any leftover quiche ingredients to make this delicious pancake.

Ingredients

Frozen spinach 4 cubes
Bacon rashers 2
Mushrooms (medium) 4
Butter 1 tsp
Salt & pepper as required
Eggs 2
Grated Cheddar cheese 40g
Double cream 70ml
Knorr Chicken stock cubes 1/4
Flour 2 tbsp

Method

Put the butter into a large frying pan. Fry the bacon, sliced mushrooms and spinach and season with salt & pepper. Allow to cool.

Put the double cream, eggs, cheese and the crumbled stock cube into a bowl. Add Step when it's cold, and flour and mix well.

Put the oil into a frying pan. Pour in Step 2 and cook both sides. You don't need a sauce with this.

Tips & Note

This is a rescue recipe from my recipe for quiche with sliced bread, using the leftover ingredients. You can make 4 pancakes with this recipe.
