Ingredients

Chicken breast fillets 2 (300g)
Salt & pepper a little
Garlic 1 clove
White wine 2 tbsp
Flour 2 tbsp
Breadcrumbs 1 cup
Vegetable oil for frying as required
Lemon wedges as required
Tartare sauce:
Gherkins (small) 2

Yogurt 1 tbsp
Salt & pepper a little

Method

1
Cut the chicken into small bitesize pieces and season with salt & pepper. Rub with the grated garlic.
2
Add the white wine and flour to the bowl and rub in again. Add the breadcrumbs a bit at a time and coat the chicken pieces well.
3
Just before deep frying, coat once more in breadcrumbs. Fry in 170-180C oil for 2 minutes until golden brown.
4
To make the tartare sauce, finely chop the gherkins and mix with the other ingredients.
5
Transfer the fried chicken nuggets onto a serving dish alongside the lemon wedges and tartare sauce.

Tips & Note

●Home made breadcrumbs (blended leftover bread of any kind) will also do
●At Step 3, if you press down the final layer of breadcrumbs, this will make the nuggets crispier
