Seafood Doria

Ingredients

Cooked rice 200-220g
Turmeric 1 tsp
【Tomato sauce】
Pancetta 30g
Onion 1/4
Dried chilli (deseeded) 1
Garlic 1 clove
Tinned tomatoes (small) 1
Salt & pepper a little
Frozen mixed seafood 140g
【Bechamel sauce】
Butter
Flour
Chicken stock cube 3/4
Salt & pepper a little
Milk 300ml
Grated cheese as you like

Method

Make the tomato sauce, here are the ingredients except the seafood.

In a large frying pan, put the oil and smashed garlic and pancetta and fry on medium heat.

When the pancetta fat dissolves, add the onion and dried chilli, then the frozen seafood.

Add the tinned tomato when the seafood has defrosted. Add salt & pepper and reduce the sauce.

Add 2-3 ladles of water and keep cooking to reduce the sauce further.

Make the bechamel sauce. In a large frying pan, add tbsp flour ad 1 tbsp butter and cook on medium heat, to cook out the flour.

Add the warmed milk and season with salt & pepper and chicken stock. Stir well to thicken.

Cook rice for 2 people (include the turmeric when cooking).

Put the cooked rice onto a dish and pour over the bechamel sauce. Then pour over the tomato sauce.

Spread over the grated cheese (the quantity will depend on your age and health!).

Put into a preheated oven 180C for 10-15 minutes.

Tips & Note

●It sounds complicated because you need to make two sauces and bake it, but it's worth it.
