Spicy Minced Lamb Sauce (for Pasta)

Lamb is low fat and very healthy. Adding dried chillis and herbs will really make you want to make and eat this - perfect with pasta or on a baguette!

Ingredients

Minced lamb 500g
Celery stalk 1
Carrot 1
Onion 1
Tomatoes (medium) 6
Olive oil 1.5 tbsp
Garlic 1 clove
Red wine 100ml
Stock cube 1
Mixed herbs 1 tsp
Dried chillis 3-4

Method

Blend the celery, carrot and onion or finely chop. Finely chop the tomato and keep separate.

Put 1 tbsp olive oil in a pan and add the celery, carrot and onion. Fry on medium heat.

In a separate pan, add the olive oil and fry the garlic. When you get the aroma of garlic, add the minced lamb.

Once the minced lamb is properly fried, add to the frying pan in Step 2 with the chopped tomatoes. Mix together and pour over the wine, stock cube and herbs and simmer.

Add the chopped dried chillis to your taste (remove the seeds if you like). Simmer until the sauce is reduced.

Tips & Note

This goes well with spaghetti or lasagne but also on toasted baguette.
