Japanese Sweet Cherry Blossom Rice Cake (Sakura Mochi)

Ingredients

Tinned aduki beans 1
Brown sugar 120g
Glutinous rice 1 gou (150g)
Water 220ml
Caster sugar 1.5 tbsp
Natural pink food colouring as required

Method

I used Epicure aduki beans, you can find them in Waitrose for example.

Drain the beans and blend. Add the brown sugar and cook in a pan to reduce until you can scrape the base clear with a wooden spoon.

Allow to cool then divide into 20g balls. I used 2 tins aduki beans in this picture to make double the quantity.

Wash the rice and drain it for 10 minutes in a colander. Then soak in the water for 2 hours before cooking. Add the food colouring and sugar and mash lightly.

Take one heaped tbsp of the rice mixture in your wet hand and flatten to a round. Place the aduki bean ball in the middle and wrap in the rice mixture. It's ready to enjoy.
