One-Pot Smoked Mackerel with Rice

Really quick and simple if you have a rice cooker.

Ingredients

Rice 2 gou (300g)
Smoked mackerel fillet 1
Spring onions 3
Ginger 30g
Soy sauce, sake, mirin 1 tbsp each
Nori sheet as\

Method

Finely chop the ginger, roughly chop the onion and remove the skin and bones from the mackerel.

Wash the rice, drain and put into the rice cook. Add the soy sauce, sake and mirin and enough water.

Mix lightly then lay the mackerel and ginger on top. Put the lid on and start the cooker.

Once cooked, add the spring onions then put the lid back on to steam.

Flake the mackerel and mix into the rice. Transfer to a serving dish and garnish with crushed nori sheet before serving.
