Chicken & Fennel Stir Fried in Oyster Sauce

Lots of people say they don't particularly like fennel but it's really crunchy and delicious - maybe this recipe will change their mind!

Serves 2

Ingredients

Fennel bulb 1/2
●Oyster sauce 2 tbsp
●Sake (or white wine) 2 tbsp
●Mirin 1 tbsp
●Soy sauce 1.5 tbsp
●Chicken stock granules 1 tbsp
Chicken thigh 1
Carrot 1/2
Courgette 1/2
Celery 1
●Water 50-80ml

Method

This is a fennel, a Mediterranean vegetable. It's used in Chinese medicine to regulate the function of the intestines.

Season the chicken thigh with salt & pepper and fry on medium heat for 6 minutes. Remove to a plate.

Chop the vegetables into slices for easy cooking.

Add the vegetables to the pan in 1 tbsp vegetable oil and fry on high heat.

Fry for 2 minutes to keep them crunchy before returning the chicken to the pan. Add all the ●ingredients except oyster sauce.

When it's cooked, add the oyster sauce and cook well. Transfer to a serving dish and enjoy!

Tips & Note

One of the good things about fennel is its crunchy texture. If you overcook, it will go soft, so cook it quickly.
