Lady Grey Tea Flavoured Shortbread

A refreshing hint of Lady Grey tea makes these biscuits that little bit more special.

Ingredients

Butter 125g
Caster sugar 48g
Flour 125g
Cornflour 60g
Lady Grey tea leaves 9g (or 4 tea bags)

Method

Preheat the oven 170C.

Whisk together the room-temperature butter and sugar until light and fluffy.

Mix the flour and cornflour together then sieve into Step 2 in 3 separate lots. Blend each time.

Grind the tea leaves (or contents of the tea bags) before adding to Step 3. Mix well.

Knead Step 4 until smooth, wrap in cling film and keep in the fridge for 30 minutes.

Dust a chopping board and roll out the chilled dough to 5mm thick.

Cut out your favourite shapes with a cookie cutter and place on a lined oven tray.

Put in the middle of the oven and bake for 20 minutes.

Place on a wire rack to cool then enjoy!
