Parma Ham & Cheese Quesadillas

Ideal as a snack or party food.

Ingredients

Soft tortilla (regular size) 4
Cherry tomatoes 4
Basil leaves 30
(to cover the whole tortilla)
Parma ham (prosciuto) slices, large 4
Cheddar cheese (grated) 120g
Pepper as required

Method

1
Slice the cherry tomatoes. Remove any stalks from the basil leaves.

Put one tortilla in a frying pan. Sprinkle 30g grated cheese on top.

Place the ham, basil and 2 cherry tomatoes on top and sprinkle over with another 30g cheese.

Grind black pepper over the top and cover with another tortilla. Press down lightly and cook on medium heat.

When the cheese has melted and it;s nicely sealed, turn it over.

Cook until nice and brown on both sides and the cheese has melted completely.

Repeat Steps 2-6 for the other quesadilla.

Transfer to a serving dish and cut into wedges with a pizza cutter.

Tips & Note

●You can use salami or any other ham if you prefer
●Cook the quesadilla patiently at Steps 2-6 so that it doesn't burn.
