Portobello Mushrooms Flamenco Style

Ingredients

Portobello mushrooms 5
Tomato sauce (shop bought) as required
Eggs 5
Salt as required

Method

1
Remove the stalk from the mushrooms and clean with kitchen paper.

Put the tomato sauce in a frying pan and reduce a little on low heat.

Scoop the sauce onto the mushrooms, keeping it level. Make a small hollow in the sauce and crack one egg into it.

Sprinkle with salt and bake in a preheated oven 180C for 10 minutes.

Tips & Note

●Choose large mushrooms. If they're small, remove some of the egg white when you crack over each mushroom to stop it overflowing
●It should take about 10-15 minutes to reduce the tomato sauce at Step 2
