Slow Cooked Mushrooms Pintxos

This pintxos really has a good deep flavour of mushrooms.

Ingredients

Mushrooms 4
Garlic 3 cloves
Olive oil 6-8 tbsp
Dried chilli (chopped) 2cm
Chicken Stock 50ml
Skewers 2
Baguette slices 2

Method

Remove the stalks from the mushrooms and keep aside.

Finely chop the garlic.

Put the olive oil, garlic and chopped chilli into a small pan and put on medium heat.

Add the whole mushrooms and stalks and the stock and simmer for 10 minutes on low heat. Pour the sauce over the mushrooms periodically.

Skewer two mushrooms and a slice of baguette and put on a serving dish. Pour over lots of the sauce. Enjoy!

Tips & Note

Simmer on low heat to get a good deep flavour of mushrooms. Slowly baste them with the sauce - take your time!
