Pickled Cucumber in Ginger

Score the cucumber a lot to speed up the marinading.

Ingredients

Cucumber 1/2 or 1
Salt 1 tsp
Water 1 tbsp
Soy sauce 1 tbsp
Mirin 1 tbsp
Ginger 1 thum

Method

Score the cucumber diagonally in several places to a depth of 1/3. Turn over the cucumber and do the same on the other side but this time in the opposite direction.

Cut the cucumber into bitesize pieces and soak in salted water for 20 minutes.

Add all the sauce ingredients together in a bowl with the shredded ginger and mix together.

After 20 minutes, squeeze out the moisture from the cucumber and soak it in the sauce at Step 3. Mix well, then keep in the refrigerator for 20 minutes.

Done! Thanks to the scoring, the cucumber absorbs the sauce very fast. If you like it hot and spicy, sprinkle with some chilli flakes.

Tips & Note

Additional note for Step 1: if you score in the same direction on both sides of the cucumber, it will cut it into pieces, so make sure you cut in a cross (×).
