Japanese Pickled Cucumber

It's easy to make this traditional cucumber pickle at home.

Ingredients

Cucumber 1
Salt 1 tsp
Soy sauce 5 tbsp
Granulated sugar 55g
Ginger 15g
Vinegar 1 tbsp

Method

Wash the cucumber and cut into 8mm slices. Cut the ginger into fine strips. Put the cucumber into a bowl and rub with the salt. Keep aside for 30 minutes.

Put the soy sauce, sugar, vinegar and ginger in a pan and bring to the boil. Add the lightly squeezed cucumber.

Turn the heat off and allow to cool for 30 minutes. Bring to the boil again then turn the heat off and allow to cool completely.

Store in the fridge.
