Prawn, Surimi and Egg Pintxos

A tasty salad of prawn and surimi with a baguette.

Ingredients

Surimi (crab sticks) 3
Frozen prawns 12
Hard boiled egg 1
Spring onions 1
Mayonnaise 1.5 tbsp
Salt & pepper as required
Thin slices of baguette 4

Method

This is the Hellman's Mayonnaise I used.

Here are all the ingredients, all chopped finely except the prawns. Separate the boiled egg into white and yolk. Keep one yolk aside.

Put all ingredients into a bowl and mix with the mayonnaise. Season with salt & pepper.

Distribute the prawns and mixed ingredients equally onto the baguette slices and sprinkle over with the crushed remaining yolk.
