Yuzu, Miso and Crushed Tofu Dipping Sauce

The sourness of the yuzu really enhances the freshness of this sauce.

Ingredients

Firm tofu 1 pack
Cauliflower as required
Carrots as required
Broccoli as required
Sauce:
Miso 2.5 tbsp
Sugar 2 tsp
Yuzu juice 2 tbsp
Mayonnaise 2 tbsp

Method

Wrap the tofu in kitchen paper and microwave for 2 minutes (800W).

Replace the kitchen paper and put a weight on it to remove the moisture.

Cook the strips of carrot in salted boiling water, together with the cauliflower and broccoli florets. Remove when cooked.

Mash Step 2 with a fork and add the ingredients for the sauce and mix well.

Serve with the cooked vegetables from Step 3.

This time, I used Yutaka brand Yuzu Citrus Seasoning bought at Tesco, it has 38% yuzu juice.

Tips & Note

●Don't overboil the vegetables.
