Sweet Aduki Bean Tortilla Crepe

So easy using tinned aduki beans.

Ingredients

Soft tortilla (regular size) 4
Butter 20g
Sugar 2 tsp
Strawberries 4
Vanilla ice cream 4 scoops
Tinned sweet aduki beans 1 (400g)
Sugar for the beans 30g
Icing sugar as required
Mint leaves for garnish as required

Method

Put the aduki beans in a pan with the juice and add the sugar. Cook on high heat, stirring to reduce.

When it becomes more solid, turn off the heat and allow to cool.

Put 5g butter in a frying pan and heat. Put in one tortilla and fry on medium heat then turn over.

Sprinkle 1/2 tsp sugar on top and transfer to a serving dish. Repeat with the other 3 tortillas, transferring to individual serving plates.

Top each tortilla with one strawberry cut into quarters, a scoop of vanilla ice cream and some aduki beans from Step 2.

Sprinkle with icing sugar through a strainer and garnish with mint leaves.

I used this tin of aduki beans, bought from a supermarket.

There's no sugar or salt in the tin, so add sugar for this recipe, plus a pinch of salt.

Tips & Note

●Keep stirring the aduki beans well at Step 1 on high heat, but be careful they don't become too solid.
