Azuki Bean Jelly (Mizu Yokan)

An easy home made sweet azuki bean dessert.

Ingredients

Chunky azuki bean paste 300g
Water 350ml
Golden caster sugar 70g
Agar powder 2g

Method

Put the water in a pan and sift in the agar powder and stir well. Turn the heat on medium.

When the agar has dissolved and the water boils, turn the heat down to low and simmer for 2 minutes.

Add the sugar and azuki bean paste and gently mix in. Turn off the heat and take the pan to a deep tray of cold water to cool, mixing gently all the while.

Pour into a flat tray or dessert ramekin dishes and cool completely until firm.
