Sweet Potato Tortilla

Only very slightly sweeter Spanish omelette.

Ingredients

Sweet potato (small) 1 (150g)
Onion (small) 1
Green pepper 1/2
Eggs (large) 3
Seasoning:
Salt 1 tsp
Pepper as required
Finely chopped garlic 1 clove
Olive oil 1 tbsp

Method

Slice the orange flesh sweet potato 3-4mm thick, then cut in half.

Concasse (coarsely chop) the onion and green pepper (7-8mm strips).

Put the potato, onions and green pepper in a bowl and cover with cling film. Microwave for 5 minutes (600W), stirring once.

In the meantime, put the egg and all ingredients for the seasoning into another bowl and mix. Add the cooked potato, onions and green peppers.

Heat the oil in a 20cm diameter frying pan and add the chopped garlic. When you can smell its aroma, pour in Step 4.

Turn the heat to very low. When it's cooked, turn it over. When both sides are golden brown, it's ready to serve.

Tips & Note

This recipe works particularly well with orange flesh sweet potato as it's less sweet and has a stickier texture.
